Wet Ingredients:

1 medium zucchini, finely grated (about 1 cup, well-squeezed)

2 large eggs (or 2 flax eggs)

2 tbsp melted coconut oil or olive oil

1 tsp vanilla extract
Optional: 1 tbsp unsweetened coconut yogurt for extra moisture
Optional Add-ins:

2 tbsp sugar-free dark chocolate chips (e.g., stevia or erythritol sweetened)

Instructions

Preheat oven to 350°F (175°C).

Line or lightly grease a muffin tin. In one bowl, mix the dry ingredients.

In another bowl, whisk the wet ingredients. Combine both mixtures and stir gently until evenly blended.
